All year round, the Leydier family takes great care to maintain and prepare the vines to produce a rich, plentiful harvest of the highest quality wines.

At Domaine de Durban, the grapes are gathered by hand to avoid harming them and sorted at the vine in order to eliminate those that are not ripe enough or that have been damaged.

The collected grapes are then separated and macerated - a process in which the grapes are crushed and steeped in juice for several days or even weeks - determining the colour, flavour, tannin content and aroma of the wine. After maceration, the grapes are fermented in temperature-controlled stainless-steel tanks.
