The ripe grapes are gathered by hand and gently separated. They are then allowed to macerate over a long period of time, imbuing complex flavours and fine textures. The total wine production of Domaine de Durban is as follows:
830 hectolitres of sweet, aperitif wine (approximately 110 000 bottles)
215 hectolitres of A.O.C Gigondas (approximately 27 000 bottles)
780 hectolitres of A.O.C. "Côtes du Rhône Villages” (approximately 106 000 bottles)
